My all time favorite recipe! It requires a dehydrator, but it’s worth the effort. I was always a pancake/crêpe lover and as vegan, I wanted to try all kinds of milk/egg/gluten free alternatives for this dish, but dehydrated pancakes are definitely the best and healthiest one. If you work out, you can add some vegan protein powder in this recipe. I’m using vanilla protein powder now and I’m sure it would make the crepes even more delicious. I will try it next time and share the recipe with you!

Raw Blueberry Crêpes

makes about 5 crêpes

5 ripe organic bananas
1 cup blueberries
pinch of pure vanilla powder

Filling:
Fruits of your choice, chopped (I used mangoes, kiwi, bananas and blueberries)
Raw coconut cream, recipe HERE

To make the crêpes: Place bananas, blueberries and vanilla powder in a high speed blender and blend until smooth. Spread the mixture on a nonstick teflex sheet and place in your dehydrator. Dehydrate for about 8 hours at 41°C until you can safely remove the crêpes. Fill with raw coconut cream and garnish with fruits.
