Do you like sweet breakfast? I always crave sweet fruits in the mornings after I wake up. Bananas are great energy filled food, perfect for the start of a new day. Paired with blackberries and figs, they bring the morning to another level. A sprinkle of cinnamon, nutmeg and a beautiful raw creation is served.

When I was little, my grandmother had all kinds of fruits, berries and vegetables in her garden. I remember feeding our dog with blackberries and he enjoyed them as much as I! Fresh blackberries were always my favourite kind of berries.

Sometimes I really miss the times spent in my grandmother’s garden eating real, organic food without realizing how important and nourishing it is for my body. Now I live in an apartment, thousands of miles away from my grandparent’s place and getting organic produce is really not that easy anymore. I still enjoy eating fresh fruits and vegetables as much as before though, if not even more.

Raw Blackberry Dream Breakfast

serves 2

4 big, ripe bananas, sliced
blackberry jam:
1 1/2 cups blackberries
1 cup fresh figs, chopped
4 dates, pitted (or more if desired)
1/2 tsp cinnamon
pinch of nutmeg
1/4 cup water, or more if needed

garnish: few blackberries, figs and leaves of mint

To make the jam: Place all ingredients in a high speed blender and blend until you get a smooth mixture.

Assembly: Place a layer of sliced bananas on each plate and spread over with the jam. Place another layer of bananas on the top and continue the process four to five times. Spread the jam over the top and edges. Garnish with blackberries, figs and few leaves of mint, serve and enjoy!

En grön smoothie är det enklaste sättet att få kvalitativ näring i systemet. Lägg till lite rå veganskt protein och det blir perfekt! Jag använde Sprout Living protein. Jag börjar seriöst bli beroende av dehär grejerna. Jag älskar alla deras smaker och använder dem i smoothies och fruktsallader. De inte bara smakar bra, det innehåller de bästa kvalitets ingredienserna. Jag kan verkligen rekommendera dessa produkterna.

Green Kingdom smaken är bäst för grön smoothie. Den innehåller en blandning av de mest näringsrika ingredienser. Tillsammans med risprotein kan du utforska den näringsmässiga kraften i spirulina och chlorella. Allt packat i en smak som påminner lite om grönt te! Jag älskade speciellt detta i denna tropiska gröna smoothie.

Green Kingdom Power Smoothie

2 skopor (30g) Sprout Living protein pulver, Green Kingdom
1 mogen banan, skalad
1 kopp ananas, skalad och hackad
½ mango, skalad
3 färska fikon
1 koppar grönkål eller spenat
1 tsk citrongräs, hackad

Lägg alla ingredienser i en höghastighetsmixer och mixa tills det är jämnt. Garnera med extra blad av grönkål och skivor av frukt.

Green Kingdom Power Smoothie

2 scoops (30g) Sprout Living protein powder, Green Kingdom
1 ripe banana, peeled

1 tsp lemon grass, chopped

Place all ingredients in a high speed blender and blend until smooth. Garnish with a few leaves of kale and slices of fruit. Drink and enjoy the power of fruit combined with greens!

Det nya året har redan kommit igång, men det finns fortfarande tid att hålla dina nyårslöften och sätta dina planer i verket för 2015. Mitt huvudsakliga nyårslöfte från ifjol var att ta min träning till en mer seriös nivå och idag är jag väldigt glad för detta beslut, eftersom det förändrade mitt liv. Om du känner att nyårslöften inte är något för dig så är det inget fel med det. Men jag tror att många kan dra nytta av att fatta beslut med målet att förverkliga dem innan årets slut. Det är en plan med en deadline. Det finns naturligtvis ingen anledning att vara arg eller besviken om du inte lyckas eller har tid att jobba på ditt nyårslöfte. Om du känner att du gjort ditt bästa för att nå dina mål, men omständigheterna inte tillåter det, tycker jag fortfarande att du ska vara stolt över dig själv. Viktigast är att försöka hålla fast vid planerna. Om dina nyårslöften inkluderar fitness eller hälsosam kost, kom ihåg, ett par dagar med träning och/eller strikt kosthållning kommer inte förändra någonting. Du måste göra det till din livsstil och hålla fast vid det. Låt oss ta en titt på några av mina planer för detta år.

Hitills är jag mycket nöjd med starten på det nya året. Det har bara hunnit gå två veckor och det har redan hänt en hel del i mitt liv. Jag hoppas att det kommer att fortsätta så här och att jag kommer nå alla mina mål. Jag fann några nya samarbetspartners och jag tror ni har mycket att se fram emot också. Jag har flertalet projekt på gång som kommer att tillkännages i sinom tid. Först av allt kommer jag börja blogga på SHAPEin, ett företag som grundades av två elitidrottare som kan hjälpa dig nå dina träningsmål. //The new year already started, but it’s still time to make your New Year’s resolutions and make your plans for the year 2015. My main new years resolution from the last year was to take my training to a more serious level and today I’m very happy for that decision, since it changed my life. If you feel like New Year’s resolutions are not your thing, there is nothing wrong with that. But I think that many people can benefit from making firm decisions supported with the idea of accomplishing them before end of the year. It’s a plan with a deadline. There is of course no need to be angry or disappointed in case you didn’t have a chance or time to make your new years resolutions happen. If you feel like you did your best to accomplish your decisions, but the circumstances didn’t allow it, I think you do have reason to be still proud of yourself. Most important is trying to stick with your plans. If your new years resolutions include fitness or healthy diet, remember, that a few days of working out or eating clean will not change anything. You need to make it your lifestyle and stick with it. Let’s have a look at some of my plans for this year.

– Striving for a balanced physique all year long
– Working on a better workout technique

– Listening to my body and avoiding injuries

So far I’m very happy with the start of the new year. It’s been only 2 weeks and it already happened a lot for me. I hope it will continue like this and I will reach all my goals. I gained some new collaboration partners and I think you have a lot to look forward too. I have a lot of projects going on that will be announced just in time. First of all from now on I will blog for SHAPEin, which is a swedish company founded by too elite athletes who are ready to help people to reach their fitness goals. I believe that our collaboration will bring us lots of positive experiences and take our proffesional goals to new levels.

RAW MOCCA MOUSSE CAKE

The Smell of fresh ground coffee is smell of sunny mornings to me. I didn’t use to drink much coffee in my old days, but I always loved candy and cakes with coffee taste. I wanted to create some healthy raw dessert with mocca taste and I found out that the mesquite powder adds to deserts a taste similar to the mocca taste.

Have you ever tried mesquite powder? Mesquite, also known as algorroba, is a leguminous plant found in arid parts of South America. Mesquite is high in protein, low on the glycemic index, and a good source of soluble fiber, meaning it digests relatively slowly and does not cause spikes in blood sugar. This gluten free powder is also a good source of calcium, iron, lysine, manganese, zinc and potassium.

I hope you will like this recipe as much as I did!

Raw Mocca Mousse Cake

 Crust:
1 1/2 cup pulp from hemp seed milk or almond milk (can be substituted with almond flour)
1 cup dates, pitted
1/3 cup raw cocoa powder
1 tsp pure vanilla powder
1 tsp coffee extract (or 2 Tbsp black coffee)
1/2 tsp ground cinnamon
2 Tbsp raw mesquite powder

Mousse cream:
2 cups dates, pitted
3 Tbs raw cocoa powder
4 Tbsp raw mesquite powder
2 tsp pure vanilla extract
5 ripe bananas, peeled and sliced
2 tsp coffee extract (or 4 Tbsp black coffee)

Garnish:
2 Tbsp raw cocoa powder
2 Tbsp coffee beans

1 spring form, coated with coconut oil or rapeseed oil

To make the crust: Place all ingredients in a food processor and process until you get formable mass. Press the mass into your spring form to get flat crust on the bottom.
To make the mousse cream: Place all ingredients to a high speed blender and blend until you get a smooth cream. Stir in to the spring form. Place in freezer for at least 6 hours until set. When serving, use a knife to release the cake from the form before getting off the ring. Sprinkle with raw cocoa powder and decorate with coffee beans.

 

//Doften av färsktmalet kaffe är lukten av soliga mornar för mig. Jag brukade inte dricka mycket kaffe förr, men jag har alltid älskat godis och kakor med kaffesmak. Jag ville skapa någon typ av nyttig raw food dessert med moccasmak och jag hörde att mesquitepulver ger desserter en smak som liknar mocca.

Har du någonsin provat mesquitepulver? Mesquite, även känd som algorroba, är en baljväxt som finns i torra delar av Sydamerika. Mesquite innehåller mycket protein, lågt glykemiskt index, och en bra källa till lösliga fibrer, vilket betyder att den smälter relativt långsamt och inte orsaka blodsockertoppar. Detta glutenfria pulver är också en bra källa till kalcium, järn, lysin, mangan, zink och kalium.

//Raw Mocca Mousse Cake

Moussekräm:
2 koppar dadlar, urkärnade
3 msk rå kakaopulver
4 msk raw mesquite-pulver
2 tsk rent vaniljextrakt
5 mogna bananer, skalade och skivade
2 tsk kaffeextrakt (eller 4 msk svart kaffe)

garnering:
2 msk raw kakaopulver
2 msk kaffebönor

1 kakform, smord med kokosolja eller rapsolja

För att göra botten: Lägg alla ingredienser i en matberedare och mixa tills du får formbar deg. Pressa ut degen i kakformen så den täcker botten i ett jämt lager
För att göra mousse-grädden: Lägg alla ingredienser till en höghastighets mixer och mixa tills du får en slät smet. Rör ned den i kakformen. Ställ i frysen i minst 6 timmar tills den satt sig. Vid servering, använd en kniv för att frigöra kakan ur formen innan du tar av sargen. Strö med rå kakao och dekorera med kaffebönor.

Christmas is a time of love, happiness, thoughtfulness.. but for most of us, it’s just a time of stress, spending money, overeating and drinking. Forget the money, forget the food and alcohol and just spend time with your family and friends, love and share, enjoy the holidays. Make small things to please your beloved ones, prepare some healthy sweets, bowl of fresh fruits or something that will make them smile. Christmas shouldn’t be about money, it should be about showing love and gratitude.

If you feel stressed and overwhelmed, just stop right there in the middle of what you’re doing. Stop and sit down, clear your mind and enjoy yourself. Nothing is more important then your health and as we know, stress is not good for us. So don’t let the holidays to make you going crazy over a spoiled pie or christmas dinner, smile and forget. People that care about you will always enjoy your spoiled pie.

Raw Gingerbread cookies

2 1/2 cups pulp from coconut milk or almond flour
1 1/2 cup fresh dates, pitted
1 Tbs cinnamon
1/2 tsp pure vanilla powder or 1/2 vanilla stalk
1/3 tsp ground ginger
pinch of nutmeg

gingerbread cutters

Place all ingredients in a food processor and process until you get a formable dough. Freeze for at least 2 hours. Stir on a table and use your cutters to create gingerbread men or other shapes. If you’re too lazy or stressed by the christmas pressure, just form into balls, they’ll be delicious in any shape! Place in freezer at least for 3 hours to firm up.

 

//Julen är en tid av kärlek, lycka, omtänksamhet .. men för de flesta av oss, det är bara tid av stress, spendera pengar, överätande och dricka. Glöm pengarna, glöm mat och alkohol och bara umgås med din familj och vänner, kärlek och dela, njuta av semestern. Gör små saker för att behaga dig r älskade, förbereda vissa friska godis, skål med färska frukter eller något som kommer att göra dem att le. Julen borde inte handla om pengar, bör det vara om att visa kärlek och tacksamhet.

Om du känner dig stressad och överväldigad, bara sluta precis där i mitten av vad du gör. Stanna och sitta ner, rensa ditt sinne och njuta. Ingenting är viktigare än din hälsa och som vi vet, är stress inte är bra för oss. Så låt inte semestern för att göra dig bli galen över en bortskämd paj eller julmiddagen, le och glömma. Människor som bryr sig om dig kommer alltid njuta av din bortskämda paj.

Raw Pepparkakor

2 1/2 cups massa från kokosmjölk eller mandelmjöl
1 1/2 dl färska dadlar, urkärnade
1 msk kanel
1/2 tsk rent vaniljpulver eller 1/2 vanilj stjälk
1/3 tsk mald ingefära
nypa muskot

pepparkakor fräsar

Lägg alla ingredienser i en matberedare och processen tills du får en formbar deg. Frys i minst 2 timmar. Rör på ett bord och använda dina fräsar för att skapa pepparkakor män eller andra former. Om du är för lat eller stressad av julen trycket, bara forma till bollar, de ska vara läcker i någon form! Placera i frysen i minst 3 timmar för att företaget upp.

RAW VEGAN PARSNIP RICE SUSHI

It’s time for some savory recipe! Sushi is one of my favorite dishes, but since I started with raw vegan diet I stopped liking rice so much. I eat it if there is no other option, for example vegan sushi in a sushi restaurant. But when I make it at home, I want it to be raw, light and juicy, made only of vegetables. I tried many raw vegan rice  alternatives, but parsnip rice is my absolute best! You have to try it to experience the taste of guilt free, light deliciousness. It’s low fat and contains very little calories, so it’s perfect for those that are trying to lose weight and got tired of their every day salad. I absolutely love and adore this recipe, must try!

Raw Vegan Parsnip Rice Sushi
Parsnip rice:
2 cups parsnip, chopped
1/3 cup pine nuts
1/2 cup zucchini, peeled and chopped
1/3 cup water
squeeze of lime juice

Filling:
1 avocado, peeled, pitted and sliced
1 carrot, sliced longways
1 bunch of arugula
1 big portabello mushroom, sliced longways

Side dish:
1/2 cup shoyu or tamari
Fresh ginger, peeled and sliced

Raw wasabi:
1/2 avocado
3 Tbsp finely shredded horseradish

about 3 nori sheets

To make the parsnip rice: Place chopped parsnips in a food processor and shred by using shredding disc. Place zucchini, pine nuts, lime juice and water in a high speed blender and blend until smooth, use more water if needed. You want to get creamy mixture. Place your pine cream and shredded parsnips in a bowl and blend together.

Place a nori sheet on your bamboo mat and spread your parsnip rice to cover the bigger half with thin (not too much) layer. Place avocado slices, carrots, arugula and portabellos in the middle longways and roll up firmly. Use your fingers to press the filling in while rolling. Tap some drops of water on the edge of nori sheet to glue it together. Using sharp knife create sushi bites.

To make the raw wasabi: Blend all ingredients together using hand blender or high speed blender to make creamy mixture.

Serve your sushi bites with raw wasabi, ginger slices and shoyu or tamari.

Raw Blueberry Crêpes

My all time favorite recipe! It requires a dehydrator, but it’s worth the effort. I was always a pancake/crêpe lover and as vegan, I wanted to try all kinds of milk/egg/gluten free alternatives for this dish, but dehydrated pancakes are definitely the best and healthiest one. If you work out, you can add some vegan protein powder in this recipe. I’m using vanilla protein powder now and I’m sure it would make the crepes even more delicious. I will try it next time and share the recipe with you!

Raw Blueberry Crêpes

makes about 5 crêpes

5 ripe organic bananas
1 cup blueberries
pinch of pure vanilla powder

Filling:
Fruits of your choice, chopped (I used mangoes, kiwi, bananas and blueberries)
Raw coconut cream, recipe HERE

To make the crêpes: Place bananas, blueberries and vanilla powder in a high speed blender and blend until smooth. Spread the mixture on a nonstick teflex sheet and place in your dehydrator. Dehydrate for about 8 hours at 41°C until you can safely remove the crêpes. Fill with raw coconut cream and garnish with fruits.

GOJI HEMP MILKSHAKE

Are you up to some easy superfood recipe? Superfoods are foods with high nutrition value and provide you with an endless list of vitamins and minerals. They help to prevent cancer and strenghten your immunity system. Some of my favorite ones are goji berries, mulberries, hemp seeds, figs and blueberies. Superfoods are not only powdered or packeged foods labeled with the sign “Superfood”, there are many fresh fruits and vegetables with extra high nutrition value. Include some of them in your meals to boost your immunity and overall health!

Goji Hemp Milkshake with Raspberries
makes about 4 cups

1 cup shelled hemp seeds, soaked overnight
3 cups filtered water
1 tsp pure vanilla powder or 1/2 vanilla bean
1/2 cup dried goji berries, soaked overnight
1 cup raspberries
3 Tbsp raw agave nectar or other raw sweetener

Strain water from soaked hemp seeds and goji berries and place them in a high speed blender along with remaining ingredients. Blend until you get smooth, creamy texture. Pour in glasses, garnish with goji berries and sprinkle with hemp seeds.

Goji Konopný milkshake s malinami

cca 4 porcie

1 hrnček lúpaných konopných semiačok, namočených cez noc
3 hrnčeky čistej vody
1 čl vanilkového prášku alebo 1/2 vanilkového struku
1/2 hrnčeku sušených goji, namočených cez noc
1 hrnček malín (môžu byť mrazené)
3 PL raw kokosového nektáru alebo iného sladidla

Vylejeme vodu z namočených konopných semiačok a goji a vložíme do mixéru spolu s ostatnými ingredienciami. Mixujeme do hladka až kým nezískame krémovú konzistenciu. Nalejeme do pohárov, ozdobíme s goji a posypeme konopnými semiačkami.

RAW ZUCCHINI PASTA WITH PINE NUTS & BASIL

Fresh and easy dinner idea. Raw zucchini pasta is one the best you can eat on raw vegan diet. It’s easy to make and it tastes just like pasta, although it contains very little calories so it’s perfect if you’re trying to keep your weight or lose a few pounds. If you don’t have a spiralizer, you can use julienne peeler and create long stripes of zucchini, carrots or other veggies. Top it with nut cheese sauce and vegetables of your choice. You can also try one of my favorite recipes for this dish, hope you’ll like it!

RAW ZUCCHINI PASTA WITH PINE NUTS & BASIL

2 big zucchinis, peeled and spiralized or cut julienne
2 medium carrots, peeled and spiralized or cut julienne
1 cup cherry tomatoes, sliced
1 cup arugula
couple of leaves of basil

Sauce:
1/4 cup pine nuts, soaked overnight
1/2 big zucchini, peeled and chopped
1/3 cup fresh basil
1/2 cup water
1 Tbsp nutritional yeast (optional)
pinch of himalayan salt

Put your spiralized zucchini and carrot in big bowl and set aside. Place pine nuts, 1/2 zucchini, basil, water and nutritional yeast in a food processor and blend until you get smooth, creamy sauce. If needed, use more water to get the creamy consistence. Pour over the “pasta” and serve on a plate. Top with arugula, cherry tomatoes and leaves of basil.

//CUKETOVÉ CESTOVINY S PÍNIOVÝMI ORIEŠKAMI A BAZALKOU

2 veľké cukety
2 stredné mrkvy
1 hrnček cherry paradajok
1 hrnček rukoly
pár lístkov čerstvej bazalky

Omáčka:
1/4 hrnčeka píniových orieškov, namočených cez noc
1/2 veľkej cukety
1/3 hrnčeka čerstvej bazalky
1/2 hrnčeka vody
1 PL lahôdkového droždia (nemusí byť)
štipka himalájskej soli 

Umyjeme a očistíme 2 cukety a mrkvy a pomocou špirálovača vytvoríme “cestoviny”. Ak nieje k dispozícii špirálovač, použijeme nôž alebo klasickú škrabku na zemiaky a vytvárame dlhé rezance.
Všetky ingrediencie na omáčku vložíme do mixéra a mixujeme dohladka. Polejeme nou cuketove a mrkvové cestoviny a ozdobíme rukolou, cherry paradajkami a bazalkou.

RAW STRAWBERRY CHOCOLATE DREAM CAKE

This gorgeous healthy cake is one of the tastiest things I ever made. What is so healthy about this beauty? Well it doesn’t contain any sugar, gluten, milk or any kind of processed food. It’s 100% raw vegan and it’s the best treat for you, your love, family or anybody else you want to make happy. So easy to make and so delicious!

RAW STRAWBERRY CHOCOLATE DREAM CAKE

makes 1 9 inch/20 cm cake

Crust
1 cup sunflower seeds
2 cups dates, pitted
1/2 vanilla stalk

Chocolate cream
5 big ripe avocados, pealed and pitted
1 big ripe banana, pealed
2 cups dates, pitted
1/4 cup raw cocoa powder

pinch of cinnamon

Cashew vanilla cream
1 1/2 cup cashews, soaked overnight
2 big ripe bananas
1/2 vanilla stalk
4 Tbsp raw coconut nectar (or more if needed)

1 9 inch/20 cm springform
5 strawberries, sliced

For the crust: Combine all ingredients in a food processor and process until you get dough like mixture. Line your springform with a nonstick sheet and press the dough in to create a crust.
For the chocolate cream: Combine all ingredients in a high speed blender and blend until smooth. Pour into the springform and place in freezer.
For the cashew cream blend all ingreadients in a high speed blender until smooth. Place in freezer for about 45 minutes for it to firm. Once the frosting is chilled, place in a pastry bag and pipe over the top of the cake.
Place in the freezer to set until firm, for about 3 hours. Then remove the springform and top with strawberries. Serve and enjoy!
